vegan Spinach Pesto Pasta

A quick and easy pasta dish that feels fresh and nourishing.

Walnuts aren’t just delicious, they’re one of the best plant-based sources of omega-3 fatty acids, which support brain and heart health. Paired with spinach (iron + vitamin C) and nutritional yeast (B vitamins), this pasta is as nourishing as it is satisfying.

Ingredients

  • 1 package spaghetti

  • ½ cup walnuts (or cashews for a nut-free option)

  • ½ cup plant based milk

  • 1 cup spinach

  • 10 basil leaves

  • 3 tbsp nutritional yeast

  • 3 tbsp olive oil

  • 1 tsp salt

  • Pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions.

  2. While pasta cooks, add all remaining ingredients to a blender and blend until smooth.

  3. Drain pasta and toss with sauce. Serve immediately.

*Tip: Delicious topped with sliced avocado and a handful of chopped nuts for extra creaminess and crunch.
